Harvest Moon - Sustainable

I love fall for its gorgeous foliage and cooler days – and for digging the potatoes! Forking up these shining purple potatoes as the harvest moon comes up over the trees is a special experience. Round purple tubers with dark yellow flesh, with a nutty flavor, are absolutely delicious in hot potato salad served with roasted turkey. Yum! Sustainable.
